First, you need to make special equipment for sugar curling. Take:
- cutting pliers;
- whisk for beating.
Bite off the corolla with nippers, then carefully straighten the links with your hands so that they look in different directions.


We start cooking products for spun sugar. Take:
- 600 grams of sugar;
- 240 ml of water;
- 100 grams of corn syrup;
- food coloring (optional);
- ice;
- food thermometer.
Begin to make spun sugar:
1. Mix all ingredients except ice and dye, put on the heat to heat. The mixture should heat up to 107 degrees Celsius. Add a dye and wait until the mixture warms up to 150 degrees Celsius (this will take about 20-25 minutes on medium heat).
2. When the desired temperature is reached, put the pan with the sugar mixture in a container of ice. Let it stand for a couple of minutes until it thickens a little.

3. Take the cooked whisk. Dip it into the mixture and swipe it upwards with a sharp movement. You will have a sugar thread. Continue doing so until a sufficient amount of spun sugar is accumulated.

Dessert and decoration are ready!
